AROMAS AND FLAVOURS

Made in a Blanc de Blancs style that Jules loves, the deliciously fragrant aromas of crunchy green apples, lemon curd and pistachio notes combine with brioche and macadamia autolysis characters on the palate. The wine has good palate weight and creamy pattiserie and toasty brioche notes that give way to a crystalline finish, making you want to grab another glass.

FOOD MATCH

For a casual match, this Blanc de Blancs pairs perfectly with a bag of ready salted chips or a bowl of truffle fries. The bubbles cut through the salt and fat for a great casual snack. But if you want to kick things up a notch, try it with battered blue cod sliders, freshly shucked oysters (the classic!), or crayfish brioche and a chilli lime mayo.

Although this wine is made in a non-vintage style, Grapes for this first release were harvested on 6th March, 2024, picked early in the season to give a light, delicate base wine for this sparkling.

Pristine Chardonnay grapes were sourced from a single vineyard parcel in the central Wairau Valley of Marlborough.

WINEMAKING

Harvest took place in the cool, early morning and the grapes were pressed very gently to give a light, fine, free-run juice. Handling in the winery was very different from still white winemaking. The juice was left exposed to oxygen and lightly fined, before cold settling to minimize phenolics, colour and obvious fruitiness, and then most of the wine was racked to steel tanks and inoculated for a hot, fast ferment with a vigorous yeast. A portion was kept aside in old French oak for a wild fermentation. The wine went through full malolactic fermentation before blending, cold stabilization and filtering. It was bottled on 25th October and laid down for the second fermentation. As the wine aged on lees in the cellar over twenty months, delicious brioche and toasty flavours developed in the wine alongside the bubbles. The beautifully sparkling wine was disgorged in June 2026 and topped up with a doseage to give a final balance of 7.5g/L. It was further aged 3 months on cork before release.

Is this wine vegan-friendly?

Yes - all of Jules'white and rosé wines are vegan-friendly.

What does "Blanc de Blancs" Mean?

It literally means "white from whites", meaning a wine made entirely from white grapes, in this case 100% Chardonnay. Jules made hers using the traditional method, the same bottle-fermentation technique used in Champagne. Stylistically, Blanc de Blanc styles of sparkling wines are usually more focused and taut in structure than sparkling wines made using Pinot Noir or Pinot Meunier (the two main red grapes used in Champagne-style winemaking).

Is this a vintage or non-vintage?

Although this wine is crafted as a non vintage style, the first release comes entirely from the 2024 vintage. In future years, Jules will hold back a little "reserve wine" from previous years to blend in for additional complexity.

How sweet is this wine?

Dry. With a dosage of 7.5 grams per litre, it falls into a "Brut" style, which is the same dry classification that most Champagne falls into. Interestingly the high acidity of sparkling wines makes them taste drier than a still wine of a similar level of sugar would. 

Is Blanc de Blancs the same as Champagne?

Not technically. "Champagne" is a protected name reserved for sparkling wine from the Champagne region of France, even when made in the exact same way. This is a Marlborough wine made using that traditional method, which is why it's labelled Blanc de Blancs rather than Champagne.

How is sparkling wine made?

We use the traditional method (famous for use in Champagne and the highest quality sparkling wines) to make the bubbles. Jules makes a dry white wine but in a way that minimises the fruity flavours from the grapes (the opposite of what she is normally looking for!). The wine is then bottled, with a little extra yeast in sugar and stored in the cellar for twenty months - often referred to as "time on lees". The yeast cells eat the sugar and give off CO2 gas, creating the fizz. The wine is then "disgorged" where the yeast is allowed to settle in the neck of the bottle, frozen and popped out, and the bottle is topped up and the final cork put in.
